Paolo Formaggioni - Italia

Paolo Formaggioni graduated in Chemistry and later in Food Science and Technology at the University of Parma.

In 2004 he obtained his PhD in Animal Production, Quality and Food Safety at the same University.

Since 1998 he is making research in the dairy sector at the Department of Veterinary Science of the University of Parma, with issues aimed at the characterization of milk for cheese making, with particular reference to the protein and mineral components.

Since 2015 he is Professor of the course “Parmigiano Reggiano Cheese” at the University of Parma.

Since 2015 he was teacher of “Milk Technology and its derivatives” in the International Master in Food Technology MITA, organized by the University of Parma in collaboration with the University of Buenos Aires.

It conducts refresher courses for cheese makers and workers in the processing of Parmigiano Reggiano cheese.

He is a member of the Scientific Secretariat and of the Editorial Committee of the scientific journal “Scienza e Tecnica Lattiero-Casearia”.

Dr. Formaggioni has published about 30 papers in international peer-reviewed journals ( and numerous others in Italian journals.

Dr. Paul Virkler is a 1998 graduate of the College of Veterinary Medicine at Cornell and a 1995 graduate of the College of Agriculture and Life Sciences at Cornell. After graduation he began work at Attica Veterinary Associates in Western NY as a cattle veterinarian doing routine preventative and sick animal veterinary work. He took a six month sabbatical leave to Ragusa, Italy on the island of Sicily where he worked on a milk quality and mastitis project with the goal of improving the quality of a local cheese produced on individual farms. Upon returning to Attica Veterinary Associates he joined the partnership and spent the next six years helping individual farms improve the health of their herds. In 2005, he took a technical service veterinarian position with DeLaval covering the United States, Mexico, and Canada. In this role, he was focused on exploring the ways to improve the interaction between milking equipment and cows through research, training, and product development. Since 2008, he has been a faculty member in the Veterinary Support Services unit at the Animal Health Diagnostic Center in the College of Veterinary Medicine at Cornell University. In this position, he assists federal, state, and private veterinarians across the United States in disease investigations involving all species, and teaches veterinary students in the field of diagnostic sciences.

Alysson Monet - Chile

Alysson Monet Galindo, es Médico Veterinario de la Universidad Católica de Temuco y Diplomada en Negocios y Administración de Empresas de la Universidad Adolfo Ibáñez. Desde el 2012 se desempeña como Jefe de Calidad de Leche y Proyectos de la Cooperativa Agrícola y Lechera de La Unión, COLUN. Asumiendo en 2017, además la jefatura del Departamento de Transporte y Trazabilidad de Leche Cruda.

Durante los últimos años, se ha enfocado en articular las distintas áreas que aseguran la cantidad y calidad de leche cruda, la cual es la principal materia prima para elaborar productos lácteos de calidad. Adicionalmente, ha desarrollado proyectos que buscan potenciar la gestión de los productores de leche en sus diferentes procesos.
